Position Overview & Responsibilities

The Kitchen Manager position is a full time salaried management position based on a minimum 50-55 hour work week.
Responsible for all aspects of daily restaurant operations with concentration on Back of House staff.  Responsible for hiring quality BOH employees.  Communicate and educate staff regarding food procedures, heating & holding temperatures.  Monitor all aspects of staff training.  Provide leadership and direction, while maintaining employee morale.  Work with management team to successfully reach company goals.  Ensure that deadlines/tasks assigned by the Regional Management team are completed.  Responsible to monitor and meet cost control budgets (labor and supplies).  Maintain accurate inventories, monitor ordering, invoicing and receiving systems. Enforce company rules and policies established in the employee handbook.  Be actively involved in restaurant operations daily and maintain a professional demeanor at all times. Specific Duties: Food
  • Monitor food quality to ensure it meets company standards
  • Communicate to commissary any issue re: Production facility/Transportation dept
  • Communicates & educates staff on food prep
  • Monitor and ensure daily temperature logs are complete
  • Know menu specification/items/allergens/procedures
  • Know inventory items/yields
  • Monitor and coordinating walk in coolers & dry storage areas
  • Be actively involved in daily restaurant operations
  • Know of special events that may affect store
  • Establish specific goals for staff
  • Monitor and establish ordering pars
  • Establish & monitor opening/closing procedures for BOH
  • Maintain kitchen cleanliness including receiving area & dumpster
  • Create BOH staff schedule
  • Follow policies & procedures to ensure security and safety of employees & guests
  • Monitor all aspects of training
  • Maintain staff levels
  • Provide direction & leadership to co-workers
  • Administer disciplinary action as needed
  • Review staff to ensure goals are met
