Position Overview & Responsibilities

  •   Oversee kitchen, kitchen prep, procedures, portioning, and execution
  •      Ensure food quality by adhering to brand standards at all times
  •      Ensure accuracy of all recipes and kitchen training tools
  •      Oversee food inventory on a weekly basis and adhere to food cost budgets
  •      Ensure accuracy of all food specs and standards
  •      Recruit and interview new kitchen staff
  •      Scheduling for the entire team
  •      Oversee training for the entire kitchen team
  •      Oversee training for Sous Chefs and cultivate new talent
  •      Maintain fast and accurate service while ensuring products are consistent with brand standards
  •      Comply with local DOH health and safety codes, and ensure company safety and security policies
  •      Must maintain an “A” health inspection rating at all times
  •      Understand and maintain culinary aspects of profit and loss statement
  •      Manage labor costs by achieving budget hours and budget labor targets
  •      Conduct monthly devoted developments with the entire kitchen team
  •      Maintain a safe and clean environment for your team at all times
  •      Work closely with Director of Operations, Chefs, and FOH managers to achieve store level goals, open lines of communication, and a positive work environment
  •      Oversee research and development process for new menu items with collaboration from our brand Culinary Creative Director.
  •      Maintain and update Standard procedures for Purchasing, Inventory, Prep, Receiving, and Cleaning / Equipment maintenance processes

Position Requirements

  • Ideal candidate will have some culinary training - Certificate, Associates or Bachelors from an accredited culinary school;
  • Must be organized and efficient in a kitchen
  • Must have lead a team of fifteen or more in BOH
  • Volume requirement $4 MM or more in scratch kitchen
  • Some creative license, but there is a full recipe book - but be part of the seasonal changes and revamping menu occasionally
